Mission Statement
Before
opening Mercedes Beans and Model Teas, we
decided
that excellence in product and service would be our key to success. This philosophy
is reflected by the high quality of our coffees, teas, chocolates, and gift
items, the superior coffee produced by fluid-air roasting, and the friendly
way in which we serve our customers. We believe that the people in our
northern region deserve the finest quality products and service.

Our History
Have you ever gone out of
your way to have something you really wanted? Living in northern British Columbia, we
craved a really good cup of coffee, and, like our friends and neighbours,
used to order coffee in bulk. Eventually we asked ourselves whether we
could provide people in our region with excellent roasted coffee. So we
opened Mercedes Beans & Model Teas, and the rest, as they say, is
history. Thanks to the continuous support of our customers, we continue to
flourish, as more and more people come to appreciate our fine products,
gifts, and excellent service.
We also believe in social
responsibility. That is why we
joined TransFair Canada,
the international Fair Trade
Cooperative. Selling Fair
Trade Certified TM coffees helps growers receive a fair market value for
their products, and helps communities improve their infrastructure.

History of Coffee
According to legend, in
1000 A.D. a young Yemeni goatherd noticed the odd behaviour of his animals
after they had grazed on coffee cherries. The shepherd shared his
observation with a Mullah, or Muslim priest, who brewed the first cup of
coffee. From Yemen
coffee spread throughout the Arabian Peninsula, the Middle
East, and from there to the rest of the world.

Unblended beans yield
superior coffee. At Mercedes
Beans & Model Teas we
do not blend our beans!
High–volume roasters often
blend 10% of high quality
coffee with 90%
low–quality beans and market this blend as high–grade coffee. We, on the
other hand, sell 100% unblended coffee beans. All our coffees come from
Arabica beans, most of which are shade-grown organically at elevations of
3,000 feet or higher, on plantations, estates, cooperatives, and even bird
sanctuaries. Grown in Africa, the Caribbean, South-east Asia, and South and
Central America, these coffees are
renowned for the low acidity and caffeine that give them their smooth,
delicious taste, and make them easily digestible. They are the crème de la
crème of coffee.
Micro-Custom Roasting
We roast our coffees in
small batches with an electric fluid-air roaster that offers several
advantages over traditional drum and
gas roasters. Fluid-air roasters do not scorch coffee beans as drum
roasters are known to, nor are the beans coated with residue, as is often
the case with gas roasters. During fluid-air roasting, coffee beans are
suspended in a fountain of electrically heated air. The heated air reaches
the beans from all directions, assuring that they are evenly and quickly
roasted. This method allows for a more accurate control of the roasting
process, and in turn enhances flavour development.

Our Teas
Along with our excellent
coffees, Mercedes Beans & Model Teas offers a wide selection of fine
teas from Asia, Southern Africa, and, yes, Canada! Currently, our most popular tea is the
South African Rooibos—Afrikaans for “Red Bush”—which contains 50% more
anti-oxidants than green teas. We carry more than two dozen Rooibos
varieties (listed on the bottom of this brochure), mixed with natural
flavouring ingredients. Other specialties are the British Columbian–grown
herbal tea from the Suskwa Valley, near the Hazeltons, and from the islands
in the Strait of Georgia.

Mercedes
Beans and Model Teas is located in the heart of Gitksan territory—at the
confluence of the Bulkley and Skeena rivers—in the charming Village of
Hazelton, British Columbia. This area is rich in culture, salmon, wildlife,
and wonderful people. Follow Yellowhead Highway 16 to its northernmost
point at New Hazelton, and turn north onto Highway 62 for a few more
kilometers into Old Hazelton.
